  • One thinly sliced avocado
  • 2 slices of wholemeal bread
  • 2-4 small tomatoes, cut in half
  • 100g of fresh mozzarella, cut into slices
  • 2 spoons of extra virgin olive oil
  • A little lemon juice
  • A little salt and pepper
  • Basil leaves

    1. Prepare the Toast:

  • 1. Mix the avocado in a bowl and add a little lemon juice, olive oil, salt, and pepper to taste. Mix well,
  • 2. Toast the slices of bread from above,
  • 3. Spread the avocado mixture on each corner of the bread,
  • 4. Place the mozzarella slices on top of the avocado mixture,
  • 5. Place the halved tomatoes on top of the mozzarella,
  • 6. Finish with a drizzle of extra virgin olive oil on top of the toast.
